About The Role
The Food Safety and Hygiene Manager will ensure the smooth and efficient operation by managing and monitoring of all Food Safety & Hygiene policies & procedures and further requirements as required by government authorities, within the resort and colleague residences. The Food Safety and Hygiene Manager will be the subject specialist and will provide support and guidance to the management and have a strong relationship with the Food and Beverage, Purchasing and Logistics and other food handling teams in order to ensure food quality and food safety standards are suitable and sufficient to satisfy ISO 22000 as well as UAE standards.

Key Duties and Responsibilities
To ensure that the quality levels of administrative duty related to hygiene and food safety is always maintained at its highest level
Collect walk through information, create trackers and follow up with periodical update.
To attend the culinary related meetings, and track progress accordingly.
Taking notes and creating minutes, create follow up list and maintain track on due dates.
Maintaining a good filing system and comply with all confidentiality requirement in accordance with the company’s policy.
Maintain a positive mood throughout the Team.
To assess, investigate and report on health and safety incidents and manage the corrective and responsive actions with all relevant departments.
Manage to food safety & hygiene management system implemented at the resort
To provide support in the development and implementation of health and safety related training programs deployed within the property and team member work space.
To act as technical advisor to the Property Crisis Management Team.
Adopt a proactive and pre-emptive approach to risk management, by establishing and implementing systems and training programs.
Ensure all health and safety programs are successfully deployed and functioning at property level and team member work space.
Monitor, analyze and report on the performance of the health and safety programs deployed.
Assess, investigate and report on health and safety incidents occurring within the resort and team member residences.
Proactively identify health and safety program development needs.
Monitor and pre-empt changes to local requirements and adapt established training and communications processes accordingly.
Monitor incident reports to formulate a trend analysis and proactively apply the necessary corrective or preventative measures.
Manage internal and external audit programs to ensure quality and compliance.
Develop function specific health and safety training programs working in conjunction with the learning and development department
Ensure health and safety training programs are implemented in all food handling departments and oversee training quality.
Liaise with all department heads on issues relating to the application of health and safety programs and assess each department/function development needs.
Provide administrative, management and technical support to all related health and safety committee, and office.
Chair Food safety committee meetings as required and actively participate in functional processes of the health and safety department.
Create Purchase Request for all hygiene related equipment and material.
Maintain stock and distribute all hygiene related equipment and material.
Coordinate, communicate all laboratory testing,
Attend daily walk through of the kitchens and food production areas, create report and follow up action plan.
Lead by example and continuously develop and mentor the Department heads, HACCP/ISO chairpeople, and colleagues.
To perform any additional or special duties, as directed by the Director of Culinary.
 
Skills, Experience & Educational Requirements
Bachelor Degree in Food Science or similar
Excellent communication & negotiation skills
Good Administration skills for reports and investigations report
Minimum 10 years’ experience in hospitality/food production industry
Experience in a Food Safety & Hygiene department in a large 5-Star Hotel group is a must
Excellent working knowledge of HACCP, ISO22000 & UAE food safety regulations & standards.            
Calendar management skills, including the coordination of complex executive meetings
Experience in MS Office, including Word, Excel, PowerPoint and Outlook   
The ability to interact with colleagues (at all levels) in a fast-paced environment, sometimes under pressure, remaining proactive, resourceful and efficient, with a high level of professionalism and confidentiality
